1 egg
2 ½ tsp. baking powder
½ tsp. cinnamon
¾ cup milk
1/3 cup cooking oil
1 ¾ cups flour
½ cup sugar
¾ tsp. salt
1 cup peeled, chopped apple
Grease 12 muffin cups or line with paper baking cups. In a small mixing bowl, slightly beat the egg, milk, and cooking oil; set aside. In a large mixing bowl, stir together the dry ingredients and make a well in the center. Add the egg mixture all at once, stirring just until moistened, leaving a lumpy batter. Fold in the chopped apple and spoon into prepared muffin cups, filling each about 2/3 full and bake for 20-25 minutes at 400⁰.
