Almond applesauce

800 g net apples (1 kg gross)
150 g ground almonds
100 g sugar
250 g water
salt.

Choose apples to cook, peel them and cut them into pieces.

Boil the water, add the apples and cook them covered (10 minutes or more depending on variety). Then, drain the apples, reserving the cooking water.

Mondel (remove the skin) and grind good sweet almonds, or simply use almond powder. Dissolve the almonds with the apple cooking water to make a thick almond milk. Leave for 1 hour and filter the almond milk through cheesecloth (squeeze the almond pulp well).

Then, boil the almond milk with a pinch of salt and add the finely chopped apples and the sugar. Serve cold.
