Chocolate Chip Ice Cream Cookie-wiches

¾ cup packed brown sugar

½ cup sugar

½ cup butter, softened

½ cup shortening

1 ½ teaspoons vanilla

1 egg

1 ¾ cups flour

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

½ cup chopped walnuts

Heat oven to 375°.  In a large bowl, combine brown sugar, sugar, butter and shortening; beat until light and fluffy.  Add vanilla and egg; blend well.  Stir in flour, baking soda and salt; mix well.  Stir in chocolate chips and nuts.  Drop by heaping teaspoonfuls 3 inches apart onto ungreased cookie sheets.  Bake at 375° for 9 to 14 minutes or until light golden brown.  Cool 1 minute; remove from cookie sheets.  Cool completely.  To assemble each cookie-wich, place a scoop of favorite flavor ice cream on the bottom side of 1 cookie; flatten ice cream slightly.  Place another cookie, bottom side down, on top of ice cream.  Gently press cookies together in the center to form ice cream sandwiches.  Quickly wrap in foil.  Freeze.
