¾ cup brown sugar, packed
3 tablespoons soft butter
2 eggs
2 cups sifted flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon baking soda
1 (8-oz.) can crushed pineapple and juice
¾ cup chopped walnuts
½ cup raisins
2 tablespoons sugar
½ teaspoon cinnamon
Cream brown sugar, butter and eggs until fluffy. Sift dry ingredients together. Stir in dry ingredients into creamed mixture. Blend in nuts and raisins. Pour into greased and floured 9×5-inch loaf pan or 2 (7×3-inch) loaf pans. Mix sugar and cinnamon, sprinkle over top of loaves. Bake at 350° for 60 minutes for large loaf or 45 minutes for smaller loaves.
