Breakfast Burritos

¼ lb. ground beef
1 T. taco seasoning
3 eggs
¼ cup salsa
¼ cup shredded cheddar cheese
4 (6 inch) flour tortillas

Brown ground beef in a small skillet over medium heat until no longer pink; remove excess grease. Stir in taco seasoning and mix until it thoroughly coats the meat; set aside. Beat eggs and pour into a non-stick skillet. Cook over medium heat. As eggs begin to set, gently scrape a pancake turner across the bottom of the skillet, forming large, soft curds.

When eggs are all set, but still moist, turn the heat to low. Stir in beef and cheese and heat until cheese is melted. Fold in the salsa. Heat flour tortillas in the microwave for 10-15 seconds each. Divide egg mixture into 4 portions and spread down the center of each flour tortilla and roll up into a burrito.
