Birthday Cake Pancakes

2 cups Flour

2 tablespoons Sugar

2 teaspoons Baking Powder

1 teaspoon Baking Soda

½ teaspoon Salt

¼ teaspoon Nutmeg

2 ½ cups Buttermilk, well shaken

2 Large Eggs

1 tablespoon Vanilla

¼ cup Vegetable Oil

½ cup Rainbow Sprinkles

Mix dry ingredients together in a large bowl.  In a medium bowl, combine wet ingredients and stir until blended.  Add the wet ingredients to the dry ingredients and stir until just combined.  Gently mix in the sprinkles. Heat a lightly oiled skillet or griddle to medium low.  Drop ¼ cup portions of batter on the skillet. When bubbles begin to form, gently flip the pancake and cook until golden brown.  Serve with butter and syrup.
