1 cup flour
1 tablespoon sugar
1 tablespoon baking powder
½ cup skim milk
¼ cup egg substitute
1 tablespoon canola oil
1 cup banana, chopped
Stir together flour, sugar and baking powder. Combine the milk, egg substitute and oil. Stir in banana. Add milk mixture all at once to flour mixture. Stir until blended but still slightly lumpy. Pour about ¼ cup of batter onto a hot griddle sprayed with nonstick vegetable oil spray. Cook until browned on bottom (when bubbles form and then break on the top). Turn and cook on the other side until done. Repeat with remaining batter.
