Lemon Bread

1 c. butter

2 c. sugar

4 eggs

1/2 tsp. salt

1/2 tsp. baking soda

3 c. flour

1 c. buttermilk

Grated rind of 1 lemon (or 1 tsp. lemon peel spice)

Cream together butter & sugar. Blend in eggs. In another bowl, combine salt, soda & flour. Add to creamed mixture alternately with buttermilk. Add lemon rind. Grease & flour 2 bread pans. Line bottom with wax paper. Bake at 350° for 1 hour & 20 minutes.
