3 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 c. sugar
1 c. vegetable oil
4 eggs, lightly beaten
2 tsp. coconut extract
1 c. buttermilk
1 c. shredded coconut
Combine flour, baking powder, soda, and salt; set aside. In a large bowl, combine sugar, oil, eggs, and coconut extract. Add dry ingredients alternately with buttermilk; stir just until moistened. Fold in coconut and nuts. Pour into 2 greased and floured 8 1/2″ x 4 1/2″ x 2 1/2″. Bake for 1 hour or until bread test done.
