Banana-Macadamia Nut Bread

2 1/2 cups cake flour

1/2 cup granulated sugar

1/2 cup firmly packed brown sugar

3 1/2 teaspoons baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1 1/4 cups mashed ripe bananas

1/3 cup milk

1 teaspoon vinegar

3 tablespoons vegetable oil

1 egg

3/4 cup macadamia nuts, chopped

Preheat oven to 350°.  Generously grease a 9×5-inch loaf pan.  In a large bowl, combine all ingredients except nuts.  Beat at medium speed with a mixer 30 seconds or until dry ingredients are just moistened.  Stir in nuts. Spoon into greased pan. Bake in preheated oven 60 to 70 minutes or until a wooden pick inserted into center comes out clean.  Cool in pan on a wire rack 10 minutes. Remove from pan and cool completely on wire rack before slicing.
