3-C Bread

2 1/2 c. flour

1 c. sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

3 beaten eggs

1/2 cup cooking oil

1/2 cup milk

2 cups shredded carrots

1 1/3 cups flaked coconut

1 cup chopped maraschino cherries

Stir together flour, sugar, baking powder, baking soda, nutmeg, cinnamon and salt. Combine eggs, oil, and milk. Add to dry ingredients; mix well. Stir in carrots, coconut, and cherries. Pour batter into a greased 9 x 5 x 3-inch loaf pan. Bake at 350° 45-50 minutes. Cool for 10 minutes. Remove from pan; cool completely. Wrap and store overnight before slicing.
